Lemon Drizzle Cake Recipe

Ingredients:
For the cake:
175g self-raising flour
175g caster sugar
175g butter
3 James Potter Eggs
3/4 teaspoon bicarbonate of soda
Zest of 2 lemons
For the drizzle:
80g caster sugar
Juice of 2 lemons
Method:
Preheat the oven to 180 degrees Celcius.
Add the butter, sugar and self-raising flour to a mixing bowl and mix well.
Add three James Potter Eggs and mix until light and fluffy.
Now add 3/4 teaspoon of bicarbonate of soad, and the zest of 2 lemons to the mixture, and mix.
Put the cake into a lined loaf tin and bake for 40 minutes.
Whilst the cake is baking, make your drizzle by mixing 80g caster sugar and the juice of two lemons to a bowl, and microwave until clear.
Take your cake out of the oven and leave on a wire rack to cool.
Once cool, prick the top of the cake with a fork, and slowly pour the drizzle over the top of the cake.
