Smoked Salmon Scotch Egg
The Scotch Egg, a perfect picnic or party food that many can’t get enough of. They’re made even better when combined with smoked salmon. This is one item you have to make for your Christmas and New Year’s Eve parties, your guests will thank you, we promise!
Ingredients:
5 Eggs
2 salmon fillets
200g smoked salmon
1 lemon
1/2 pack dill
1/2 pack parsley
1 tbsp capers
50g plain flour
100g panko breadcrumbs
75g mayonnaise
Method:
Boil 4 eggs for 6 minutes, drop in cold water once the time is up.
Once cool, carefully peel the eggs
Mix the salmon, smoked salmon and lemon zest in a food processor to form a paste. Stir in the capers and herbs.
Divide the mixture into four balls. Pat the eggs dry, flatten the balls and tease the mixture around the egg until covered.
Put the flour and cayenne pepper into one bowl. Crack the remaining egg into another bowl and whisk., Put the breadcrumbs into a third.
Dip the eggs into the flour, then the whisked egg and then the breadcrumbs.
Fill a heavy-bottomed pan two-thirds with oil and heat to 180C. Fry the Scotch eggs for 5 mins until deep golden, drain on kitchen paper and sprinkle with flaky sea salt and a little more cayenne.
Mix the mayo with the lemon juice, then serve the Scotch eggs alongside with lemon wedges for squeezing over.
