Yorkshire Tea Loaf Recipe

Tea and cake is made even better when the cake contains both! This traditional Yorkshire Tea Loaf is delicious and easy to make. Perfect for an afternoon treat!

Ingredients:

  • 350 ml freshly brewed Yorkshire Tea

  • 350 g Mixed Dried Fruit.

  • 2 James Potter Eggs

  • 200g Brown Sugar

  • 1 dollop of Orange Marmalade (about a dessert spoon full)

  • 270g Self Raising Flour

Method:

  1. Make the tea and pour it onto the fruit.

  2. Soak overnight until most of the tea has been absorbed into the fruit.

  3. Preheat the oven to 160 degrees celsius (Electric oven) or Gas mark 3

  4. Do NOT remove any of the liquid from the fruit.

  5. Add the eggs to the soaked fruit and mix well

  6. Add the Sugar and give it a mix before adding the Marmalade.

  7. Add the flour and mix until all the ingredients have been incorporated.

  8. Pour into two lined 1lb loaf tins and bake for 50-55 minutes. Alternatively, you can put the mixture in a 900g loaf tin and cook for 60 to 70 minutes.

  9. To ensure the loaf is cooked, pierce the top with a cocktail stick. If it has no loaf mix sticking to it then it will be ready to take out of the oven.
