Eggnog-Inspired Cupcake Recipe
Eggnog + cake = the perfect Christmas treat ๐
These eggnogg-inspired cupcakes are quick and easy to make
Ingredients:
4 Eggs
Butter
Caster Sugar
Self-Raising Flour
Icing Sugar
Cream Cheese
Rum
Ground Nutmeg
Ground Cinnamon
Ground Ginger
Method:
Cupcakes:
Pre-heat the oven to 180 degrees Celcius
Weigh the eggs. Then use the same weight in butter, caster sugar and self-raising flour. E.g. If your eggs weigh 250g, weigh 250g caster sugar, 250g butter and 250g self-raising flour.
Mix the eggs, sugar, butter, and flour.
Add 3/4 teaspoon ground nutmeg, 3/4 teaspoon ground cinnamon, and 3/4 teaspoon ground ginger into the mixture. Mix well.
Fill a cupcake tin with cupcake cases, and divide the mixture equally between all 12 cases. Put the cupcakes in the oven for 15-20 or until golden brown/a skewer comes out of the middle clean.
Whilst the cakes are cooking, on the hob mix 75g caster sugar with 5-10 tablespoons of rum (depending on how strong you want the drizzle). Gently heat until the sugar is dissolved.
Remove the cupcakes from the oven, prick each cupcake with a fork a couple of times and use a tablespoon to pour the rum drizzle over each cupcake.
Cream Cheese Frosting:
Beat 100g softened butter with 100g icing sugar.
Add 200g cream cheese.
Once mixed, add 1 tsp ground nutmeg and 1tsp ground cinnamon. Mix again.
When the cupcakes are cool, add the icing on top. You can do this through using a butter knife to smooth the icing around the cupcake, or use a piping bag if youโre feeling extra fancy.
